Guacamole is not only easy to make but an extremely healthy snack!  It’s a great topper to your favorite Mexican dishes.  I even put it on sandwiches as a spread!

Get all your ingredients.  Best to use fresh lime, garlic, tomato, onion and of course avocados!

So, the best way to get the good part of the avocado out is first slice it in half long ways.  Just give a twist and the halves will separate.  Next take your knife and score or make lines both vertically and horizontally like shown above.  This will help just pop that stuff out of its skin.  Next take a fork and put it along the skin by the dark green and start scooping it out.

I think that Red or Vidalia Onions are the right flavor for this.  Press your fresh garlic on top of the avocao in your bowl and put in the chopped onion.

Next, I put in my chopped tomato, lime juice, salt, and pepper to taste.  If you like spicy add Red Pepper Flakes, jalapeno or even a dash of Tabasco sauce.  If you like cilantro in yours, you can add this here.  The lime juice is key as it will help with the avocado turning brown.

 

Guacamole

 

Mix it up!  Always have corn tortilla chips around so you can taste.  Add seasonings to get your favorite flavor!  This will last a few days in the refrigerator.  Unless your house is like mine, then it’s gone within a day!

This is a chunky, creamy guacamole that is great for chips or topping your favorite foods with.
Servings: 2 people
Ingredients
  • 2 Avocados Ripe
  • 1/3 Vidalia (Red) Onion Medium, finely chopped
  • 2 Roma Tomatoes Chopped
  • 1 lime Juiced
  • 2 Cloves garlic Fresh, pressed
  • Salt To Taste
  • Pepper To Taste
Instructions
  1. Avocado - slice open and remove pit. Remove the avocado from the skin add to medium size bowl.
  2. Chop tomatoes, to be bite size pieces, add to bowl.
  3. Add to bowl lime juice, pressed (or minced) garlic, onion.
  4. With a fork stir.
  5. Add salt and pepper.
  6. Taste and season further to taste.
