This soup is an easy-to-make soup that should be in your recipe book or on a card in your recipe box. You can make this soup with beef or ground turkey. It is a soup that you can have that those people in your family who enjoy spicier foods can kick up a notch easily by adding hot sauce to your tabletop.

Ground Beef

Start with chopped onion. Chop the onion up and put it into your soup pot or kettle. Add olive oil to begin sauteing the onion. Add salt and pepper to taste as the onion starts to turn color. When you are cooking the onion notice that the onion will start out white. As the onion cooks the color will disappear and it will become clearer before it will brown. When the onion is clear in color add the meat.

Ground Meat

If you are using beef, you can use 73% to 93% fat or ground turkey it will not matter for the flavor of the soup. When you cook with ground meat the fat content will determine if you have to drain the meat or not.

Ground beef will drain fat, especially if you are using 73% beef. What does that percentage mean? That percentage is telling you how much meat and fat are in the package. For instance, a 73% package has 73% meat and 27% is fat. The lower the number on the meat the higher the fat content in the meat.

Using ground turkey there will be no fat, but it will drain water. You will want to drain it off while cooking, do not drain the turkey. When the water disappears or evaporates is when your ground turkey is done cooking.

Making the Soup

The meat and onion are cooked in the pot. When the meat is cooked, drain any excess fat off, if it is there. You will add potatoes and tomato sauce. Some of you may not want to sauté the onion, and that is fine. If you did not, add onion to the soup. Some of you may want more onion, that’s fine too. When I cook meat up, I generally cook it with onion because I like the flavor. You can make this soup without cooking the onion with the meat.

Tomato Sauce, Potatoes and Ground Beef

Stir in water, salt, pepper, and hot sauce. This is where you can make this soup a little milder for those who do not care for very spicy foods. You can leave the hot pepper sauce out. The soup will taste good. The spicey can come by each person adding hot pepper sauce to their own soup bowls. This could be a good soup to have in your family’s recipe box because it can appease the spicey eater to the mild eater.

Boiling the Soup

Bring the soup to a boil. You want to make sure that the pot boils. That means there are bubbles throughout the soup, not just the occasional air bubble. Make sure that you are stirring the soup occasionally while bringing it to a boil.

Reduce the heat on the soup and simmer for about an hour or until the potatoes are tender and the soup has thickened. This is a liquid soup, so do not expect it to get very thick. It will thicken up from a water base to a thicker soup base. The color will change in the soup as well.

Serving the Soup

Serve this soup with hot sauce, muffins, cornbread, bread, or crackers on the side. It is a warm soup that is hearty in flavor with the meat and potatoes. This soup freezes well, so any leftovers I would freeze. You can freeze the soup individually or enough for how many people are in your family.

To serve this soup after it has been frozen is very easy. Empty the container into a pot and heat on the stove. Even if the soup is still frozen, put it in the pot and let it defrost from the heat on the stovetop. This is a great thing to have in anyone’s freezer for those cold nights or busy nights when you do not have time to cook.

Ingredients
  • 1 pound Ground Beef Ground Turkey will work too.
  • 4 cups Cubed and peeled Potatoes 1/2" cubes
  • 1 small Chopped Onion
  • 3 8 oz cans Tomato Sauce
  • 4 cups Water
  • 1/2 tsp Salt
  • 1 1/2 tsp Pepper
  • 1/2-1 tsp Hot Pepper Sauce
Instructions
  1. In a large kettle or pot brown meat. Drain.

  2. Add potatoes, onion, and tomato sauce.

  3. Stir in water, salt, pepper, and hot sauce.

  4. Bring to a boil.

  5. Reduce heat and simmer for an hour or until potatoes are tender and the soup has thickened.
