Taco Soup Gluten-Egg-Free is easy to make and tastes delicious.

This is a recipe that can feed several people as well as freeze well. It has several items in the soup that make this soup a must-have in anybody’s recipe box. The ability to make this soup with great flavor then freeze the soup for a chilly winter day is what makes this one of my favorite soups to have.

Raw Hamburger and Onion Cooking

Take one onion and start to sauté the onion. Put olive oil in the pot. The pot you will use for making the soup is the pot that you want to cook this in. Then place the chopped onion in the pan.

Garlic

You can salt and pepper the onion if you want too. Add the meat, ground beef or turkey, to the sautéing onion. You can add garlic now while it is cooking, or you can add it later. Personally, I would add it now, it really helps to flavor the meat. Cook until the meat is finished cooking.

Next step is to add the canned ingredients. Do NOT drain anything. This will add to the soup flavor. You want to add kidney beans, pinto beans, corn, and canned diced tomatoes. Then add the Taco Seasoning.

The Taco Seasoning that is recommended is McCormick Taco seasoning. I have compared the ingredients on the regular taco seasoning to the gluten-free taco seasoning packet to find they are the same!

I personally buy the normal seasoning because it is less expensive. If you find having the normal seasoning does not work, then use the gluten-free seasoning packet.

Once all the ingredients are in the pot let the soup simmer for an hour. The reason behind this is that the seasoning in the pot needs time to combine with the ingredients to give you a wonderful taco flavor.

Serve this in a bowl with taco chips or tortillas and guacamole. If you can have dairy, it is great with Cheddar, Monterey Jack or both cheeses and sour cream. Do you enjoy olives, black olives? Top the soup with black olives then. Some enjoy spicey foods, you can top with jalapeño peppers.

Soup that tastes and is as filling as tacos!

Ingredients
  • 1-2 tbsp olive oil
  • 1 whole yellow onion
  • 1-2 cloves garlic
  • salt & pepper to taste
  • 1 pound ground beef or turkey
  • 16 oz can Chopped Tomatoes
  • 16 oz can Pinto Beans
  • 16 oz can Kidney Beans
  • 16 oz can Corn
  • 1 package McCormick Taco Seasoning
Instructions
  1. Saute the onion & garlic in the pot for the soup. Salt & Pepper to taste.

  2. Add the ground meat and cook until done. If you have a lot of grease from cooking you can drain it.

  3. Add all the canned ingredients into the pot. Do NOT drain the cans - this will add to the soup.

  4. Add taco seasoning.

  5. Bring to a low boil, lower heat and simmer for an hour.

  6. Serve with guacamole, sour cream, cheese, jalepenos, or olives. You can serve it with taco chips or tortillas.
